Olde York & Lemon Cheesecake
Cheese Recipe Ingredients
- 225g Olde York
- 15ml Gelatine
- 60ml water
- 75g Caster sugar
- Finely grated rind and juice of 2 lemons
- 150ml Soured Cream
- 2 eggs, separated
- 175g Digestive biscuit, finely crushed
- 75g Butter
Cooking instructions
- Melt the butter in a pan and mix in the biscuit crumbs. Press down in an even layer in the base of an 8inch spring release tin.
- Chill in the fridge for at least 30 mins or until firm.
- Sprinkle the gelatine into 60ml of water in a small bowl. Place the bowl in a pan of simmering water and stir until dissolved.
- Put the lemon rind, juice and Olde York into a bowl and add the soured cream and sugar and mix well together until smooth.
- Add the egg yolks and cooled gelatine.
- Whisk the egg whites until stiff and then fold lightly into the mixture.
- Carefully pour into the tin and chill for several hours, preferably over night.
- Remove the cheesecake from the tin and place on a flat serving plate.
- Decorate with Fresh Fruit
A refreshing dessert to accompany any meal! Serves four to six people.
