Olde York & Lemon Cheesecake

Cheese Recipe Ingredients

  • 225g Olde York
  • 15ml Gelatine
  • 60ml water
  • 75g Caster sugar
  • Finely grated rind and juice of 2 lemons
  • 150ml Soured Cream
  • 2 eggs, separated
  • 175g Digestive biscuit, finely crushed
  • 75g Butter

Cooking instructions

  1. Melt the butter in a pan and mix in the biscuit crumbs. Press down in an even layer in the base of an 8inch spring release tin.
  2. Chill in the fridge for at least 30 mins or until firm.
  3. Sprinkle the gelatine into 60ml of water in a small bowl. Place the bowl in a pan of simmering water and stir until dissolved.
  4. Put the lemon rind, juice and Olde York into a bowl and add the soured cream and sugar and mix well together until smooth.
  5. Add the egg yolks and cooled gelatine.
  6. Whisk the egg whites until stiff and then fold lightly into the mixture.
  7. Carefully pour into the tin and chill for several hours, preferably over night.
  8. Remove the cheesecake from the tin and place on a flat serving plate.
  9. Decorate with Fresh Fruit

A refreshing dessert to accompany any meal! Serves four to six people.
