Tasting notes

    Monks Folly is a classic mould ripened cheese, made to a recipe which is believed to have been used by the Monks of a nearby Abbey. Monks Folly has a crisp clean flavour and a chalky texture on the inside when young, but it changes with age and becomes soft and ripe and develops a fuller, more rounded flavour..

Monks Folly is made from pasteurised cows milk and suitable for vegetarians.

Background

Monks Folly is produced using Yorkshire cows milk from cattle local to our farm. To achieve its unique character and texture salt is added during the process, rather than at the end. This achieves a crumbly texture that, once mature, turns wonderfully smooth and buttery. Each cheese is then carefully matured in our ripening store for two weeks. Over this time the crumbly texture begins to ripen from the outside in. Once they have achieved a lovely bright blue coat they are hand wrapped in waxed paper and matured for a further 3-4 weeks before being truly ripe.
