Tasting notes
Made from 100% local cows milk from selected farms within 20 miles of Shepherds Purse Dairy. Yorkshire Ryedale is a hand made traditional cheese, aged for a minimum of six months. A white cheese, moist, creamy yet crumbly with a slightly fruity bite on the palate to finish.
Yorkshire Ryedale is made from pasteurised cows milk and suitable for vegetarians.
Background
Shepherds Purse Yorkshire Ryedale cheese was developed in 2004 to extend our range of cows milk cheeses. Made to a traditional 11th Century Dales recipe adapted to give a more moist creamy cheese. It is slightly crumbly when young but as it matures over at least 6 months it develops a slightly fruity flavour, with a sharp bite on the palate to finish.
