YORKSHIRE BLUE

Yorkshire Blue

This cheese surfaced in early 1994 and was something of a departure for Shepherds Purse,
in so far as it is made from cows' milk. Until then all the company's production
was ewes milk cheese.

Yorkshire Blue's recipe was developed from the traditional blue Wensleydale recipe,
which had been extinct since the 1960s. After skilled work by the product development
team, we had our Continental style full fat blue cheese. Yorkshire Blue is produced from
fresh cows' milk collected from local farmers in the northern end of the Vale of York.
Guided gently along it's 10 week maturation period this cheese has a creamy texture
which when at room temperature develops a slightly sweet, full, round, mellow taste.

Indeed people who do not like traditional British Blue cheeses, have, after a little gentle
persuasion, tried this cheese and conceded that they liked it.

This is a home-grown cheese, which has claimed the Supermarketing Quality Award
for the dairy section fending off competition from across the industry. Also under its
belt; Champion Blue Cheese at the Nantwich International cheese show and the fact
that it has been selected to serve on numerous International Airlines menus, cements
it's reputation for being a consistently high quality cheese.

You will find this cheese on the deli counters of Sainsbury's and Tesco stores Nationwide,
quality delicatessens across the UK and if you happen to be over in America you might
come across it in New England State!

MRS BELLS BLUE

Mrs Bells Blue

BBC Good Food Magazine "Cheese of the Year"

Gold medal winner and Reserve Supreme Champion are only two of the accolades that
this cheese has been awarded in recent years. Made with fresh ewes milk from local
flocks, each individual cheese is nurtured over its' 10 week maturation period to create
its own distinct creamy smooth texture accompanied by a superior complex blue flavour
with a subtle finish. Mrs Bells Blue is much whiter to the eye than it's sister cheese
Yorkshire Blue and has a slightly sharper taste even though they are both crafted to a
similar recipe. Not unlike Roquefort in texture as it is luxuriously soft and creamy and
to taste it is less salty.

Mrs Bells Blue was selected to feature on Eurostar's menu late 1999 for a three-month
period, which was later extended as the cheese was so well received. Early March 2000
British Airways requested it for their International flight menus and have been serving it
regularly since.

BUFFALO BLUE

Buffalo Blue

Buffalo Blue is the latest in our range of speciality blue-veined cheeses. Made from fresh buffalo
milk, it complements both Yorkshire Blue and Mrs Bells Blue. This cheese has been developed
by Judy who was offered some buffalo milk by a local farmer who had discovered that the milk
has a high nutritional content and would benefit his son who suffers from cystic fibrosis.

Buffalo Blue is much whiter than our other blues but its texture is very similar, being soft and
spreadable. It has a rich yet delicate, smooth taste which leaves the palate feeling fresh.

The new Buffalo Blue was officially launched at the British Cheese Awards in Stow-on-the-Wold
in September 20
01 where the complete range of our blues was on display.

BYLAND BLUE

A new addition to the Shepherds Purse range, Byland Blue is made from 100% Yorkshire cow’s milk. Byland Blue is a traditional English-style blue cheese inspired by early cheesemaking by Cistercian Monks at the local abbey.—Byland Abbey. 

Byland Blue has a robust, full-bodied blue flavour with a firm, yet creamy texture.  Slightly sharper than our other blue cheeses, Byland Blue has a tangy, piquant, peppery flavour and a spicy aroma that works beautifully with a wide range of foods.  Byland Blue can be easily identified by its traditional rind, giving it a truly rustic appearance.

FINE FETTLE YORKSHIRE CHEESE

Yorkshire Feta

When is Feta not Feta? When it's made in Yorkshire according to the powers that be within the EU! Despite this we still believe our Fine Fettle Yorkshire Cheese is the best Feta in the world!

We hand wax the cheese in a two-tone green/natural wax, which gives Fine Fettle Yorkshire Cheese individuality on busy deli counters.

Fine Fettle Yorkshire Cheese is hand-made from 100% fresh whole ewes milk giving
Fine Fettle Yorkshire Cheese its' distinctive creaminess and subtle taste. Lightly salted and matured over a 14 day period (at least) allows the cheese to develop it's soft, slightly crumbly texture with a sweet piquant flavour.

Like our other cheeses you can find Fine Fettle Yorkshire Cheese in Sainsbury's, Tesco (deli counters) nationwide. In addition to this it is available from regional Asda stores and high quality delicatessens.

OLDE YORK

Yorkshire Feta

Olde York is a fresh ewes milk cheese made using local milk. Produced to a coulommier method, layering the curd in the moulds, which ensures a soft, delicate, mousse like texture. Olde York has a beautiful fresh, crisp, creamy taste that cleanses the palate leaving it refreshed. It slices straight from the fridge and spreads easily once at room temperature. Olde York is coated in wax which gives it a superior shelf life and a attractive appearance to boot!

BASILANO

Yorkshire Feta

Basilano is a white cheese made from sheep’s milk, which is marinated in herbs.

Sheeps milk is has naturally higher levels of poly and monounsaturated fats than ordinary cow’s milk and has been suggested that it is a healthy alternative as it is low in cholesterol.

Basilano also has high moisture content. This combines to give a cheese with a total fat content of around 20% (ordinary cheddar cheese can be between 35% and 40% fat).

People who are allergic to cow’s milk products can often eat Sheeps milk products without any allergic symptoms arising.

KATYS WHITE LAVENDER

Yorkshire Feta

Katy’s White Lavender is a fresh, white cheese made from sheep’s milk, which is marinated in Lavender Flowers.

Sheeps milk is has naturally higher levels of poly and monounsaturated fats than ordinary cow’s milk and has been suggested that it is a healthy alternative as it is low in cholesterol.

Both Lavender and Sheep’s Milk have been shown to help promote restful sleep.

People who are allergic to cow’s milk products can often eat Sheeps milk products without any allergic symptoms arising.

RYEDALE RANGE

Ryedale Original

Ryedale is the first white cows milk cheese to be made at Shepherds Purse and it has been devised utilising Yorkshire milk. A unique, fresh, white, cheese produced from local, cows milk.

Made to an age old, local method, this cheese has a wonderful delicate texture, which is almost mousse-like. Firm when straight from the fridge but allow it to warm slightly and it softens to a smooth, luxury cheese, which is almost spreadable – so creamy, you wouldn’t believe it’s simply cows milk!

This special cows milk cheese has a sophisticated flavour profile, which is slightly sweet and creamy but followed by a mild tang, which invigorates ones taste buds!

Ryedale with Italian herbs

Marinade in a luxury blend of Italian herbs and a sprinkling of red bell peppers. A visually impressive combination of colours complimented by a fresh yet Adriatic flavour profile with a hint of garlic.

MONKS FOLLY

Monks Folly is a luxurious new cheese, made to an old recipe, it revies the classic mould ripened cheese making which has been gone from Yorkshire since the time of the monasteries . Monks Folly has a crisp clean flavour and a chalky texture on the inside when young, but it changes with age and becomes soft and ripe and develops a fuller rounder flavour. Delicious with a crisp dry white wine when young and a robust fruity red when older. Available for mail order later in 2008.
