Basilano is a white cheese made from sheep’s milk, which is marinated in herbs.
Sheeps milk is has naturally higher levels of poly and monounsaturated fats than ordinary cow’s milk and has been suggested that it is a healthy alternative as it is low in cholesterol.
Basilano also has high moisture content. This combines to give a cheese with a total fat content of around 20% (ordinary cheddar cheese can be between 35% and 40% fat).
People who are allergic to cow’s milk products can often eat Sheeps milk products without any allergic symptoms arising.

Katy’s White Lavender is a fresh, white cheese made from sheep’s milk, which is marinated in Lavender Flowers.
Sheeps milk is has naturally higher levels of poly and monounsaturated fats than ordinary cow’s milk and has been suggested that it is a healthy alternative as it is low in cholesterol.
Both Lavender and Sheep’s Milk have been shown to help promote restful sleep.

RYEDALE RANGE
Ryedale Original
Ryedale is the first white cows milk cheese to be made at Shepherds Purse and it has been devised utilising Yorkshire milk. A unique, fresh, white, cheese produced from local, cows milk.
Made to an age old, local method, this cheese has a wonderful delicate texture, which is almost mousse-like. Firm when straight from the fridge but allow it to warm slightly and it softens to a smooth, luxury cheese, which is almost spreadable – so creamy, you wouldn’t believe it’s simply cows milk!
This special cows milk cheese has a sophisticated flavour profile, which is slightly sweet and creamy but followed by a mild tang, which invigorates ones taste buds!
Ryedale with Italian herbs
Marinade in a luxury blend of Italian herbs and a sprinkling of red bell peppers. A visually impressive combination of colours complimented by a fresh yet Adriatic flavour profile with a hint of garlic.

MONKS FOLLY
Monks Folly is a luxurious new cheese, made to an old recipe, it revies the classic mould ripened cheese making which has been gone from Yorkshire since the time of the monasteries . Monks Folly has a crisp clean flavour and a chalky texture on the inside when young, but it changes with age and becomes soft and ripe and develops a fuller rounder flavour. Delicious with a crisp dry white wine when young and a robust fruity red when older. Available for mail order later in 2008.
