Our May Cheese of the Month is our light and citrusy Mrs Bell’s Salad Cheese. Piquant and lemony in flavour, its slightly crumbly texture makes it super versatile, and perfect for adding into summer salads, pasta dishes and so much more.
Our very first ewe’s milk cheese created in the late 1980’s by our founder Judy Bell, it holds a very special place in our story, earned international awards and even being featured on Paul Hollywood's BBC One program Pies & Puds.
Made exclusively from 100% British sheep milk
Made exclusively from 100% British sheep milk, it started life as Yorkshire Feta, before changing to Fettle in 2008 after "Feta" was awarded a Protected Designation of Origin (PDO) by the European Commission. Finally, more recently, after our campaigning to support sheep milk farmers during the pandemic, we had to change it again, and Mrs Bell’s Salad Cheese was finally settled on. The name may have changed but the quality and care in creating this very special cheese has remained the same throughout. Handmade and hand-salted, it continues to be made right here on the family farm here in North Yorkshire by our talented team of cheese makers.
It’s enduring appeal over the last three decades means it continues to be one of our most popular cheeses and has become somewhat of a fridge staple for its many fans.
