Mrs Bell's Blue is made from the finest quality sheep milk. We produce in small vats and after the first 24 hours of turning and formation, we hand salt each cheese. Each batch is then matured for a minimum of 10 weeks. This achieves the complex blue flavour that’s comparable to Roquefort but creamier and mellower.

Bluemin White is made in small truckles and ripened with great care in our carefully managed ripening stores. Importantly, they're not spiked so they have no blue vein, but they develop a velvety blue rind and ripens gently from the outside in. This breaks down the body of the cheese to an unctuous heaven.

A powerhouse blue cheese with serious credentials. Deliciously creamy and luxuriously more-ish, this cheese is a strong arm to success. Northern Blue was launched in 2019 as the more powerful and more mature brother to Yorkshire Blue. Aged for a minimum of 10 weeks, we use a stronger strain of Penicillium Roquefort to achieve a more robust blue flavour.

Buffalo Blue delivers a well-balanced blue flavour, which is complimented with a creamy yet light, nearing cleansing, effect on the palate.
