Deliciously quick and full of flavour. This simple dip can be tweaked to your taste and prepared ahead of time.
1. Add all the ingredients into a food processor
2. Whizz to a smooth consistency.
3. Chill and serve with well toasted sourdough, rye bread "soldiers" or celery.
- 200g Yorkshire Fettle
2 pomegranates
1 cucumber, diced small
½ red onion thinly sliced
40g mint leaves, roughly chopped
40g coriander leaves, roughly chopped
120g bag of mixed rocket, spinach and watercress
